Family Friendly Cooking – Quick and Easy

If your kids are anything like mine then pasta is always a winner, especially at this time of year.  My boys love nothing more than a big bowl of pasta.  They also love mac n cheese; but this simple creamy bacon pasta sauce is really tasty for a little change.

Being wheat intolerant I often miss out on these meals as I’ve never been that impressed by gluten free pasta’s.  However I noticed there was a couple of new alternatives on the supermarket shelf this week.  Green Pea Pasta and Red Lentil Pasta, so it was the perfect time to give them a go.

Simple Creamy Bacon Pasta

  • 500g pasta (of your choosing)
  • 8 slices bacon, fat removed
  • 10 fl oz. cups cream
  • 3 cloves garlic, finely chopped
  • 150g freshly grated Parmesan cheese

Serves 4-6

Preparation 10 mins

Cooking Time 20 mins

Put a large pan of salted water on to boil.

Once boiling add the pasta

Cut the Bacon into thin strips, then dry-fry in a large frying pan over medium heat until crisp.

Add the cream, garlic and Parmesan and cook over low heat for 4 minutes.

Drain your pasta and add to the pan with the sauce.

Stir well and serve with garlic bread.

Top Tip: When draining, keep a little of the starchy pasta water in the pan.  Add to the sauce with the pasta, it helps to thicken the sauce.

Simple Creamy Bacon Pasta

This dish always gets a thumbs up from the boys and it was so nice this time to actually be able to join them to eat.  I chose to try the green pea pasta and did have a little waver as I was cooking as I absolutely hate peas.  I used to swallow them whole with juice when I was a kid.  However once the sauce was added, there was no hint of peas #thankgoodness.  The texture was great as well, not chewy or tough like a lot of the gluten free pastas I’ve had before.  I even managed to persuade the boys to try, and they didn’t think it was awful #bonus

So a really successful family meal that we all loved, and a happy mummy with some new pasta.  Red lentil to try next…
